It’s been in the upper 90s here. Very hot and humid with no rain in sight. We’ll most likely hit the triple digits this week. Usually, it doesn’t get that hot until July or August but this hasn’t exactly been a normal weather year, either. So NOT looking forward to the rest of the summer.
I have an interview today! And a phone interview tomorrow. The nice thing is both of these jobs are about 20 minutes from my house with absolutely NO freeway time. I love that.
The kid is in this environmental camp this week and is loving it. Mostly because he gets to catch bugs and look at snakes. (Yuck.) While he’s been away at day camp, I’ve been writing. I didn’t get much done yesterday but the day before was stellar. I’m just over 12k total in the new story and it’s starting to mesh. I’m not plotting but as I’m writing, I have a feel for all the characters, their history, and their story. It’s great fun. I also found out that one of my submissions is (possibly) out for a second read. I’m so excited about that. I hope for a positive response. Even a revise/resubmit. So cross your fingers for me. 🙂
I stitched some on my tiger. That one is going slow. Mostly because I haven’t been stitching as much as I’d like.
And I tried some new recipes last night. These were positively divine. Today I’m going to share with you the Sweet Cucumber Salad. So easy and so light and so perfect for summer!
Sweet Cucumber Salad
Ingredients:
3 cups thinly sliced quartered cucumber
2 tsp minced fresh cilantro
Dressing:
1/4 cup sugar
2 Tbsp water
2 Tbsp white wine vinegar
2 Tbsp lime juice
1 green onion, thinly sliced
1/2 tsp salt
In a salad bowl, combine cucumber and cilantro. In a small bowl, whisk the dressing ingredients. Drizzle over salad and toss toe at. Serve with a slotted spoon.
Easy, eh? It was a hit at my house. Well, with the husband. The kiddo wasn’t impressed. 🙂
